The field of Solid-State Fermentation (SSF) has strongly emerged and developed during the last 10-15 years. There has been increasing interest and interactions world-wide among the Microbiologists, Biochemists, and Chemical Engineers to work and develop this technique of fermentation.Although, many publications on Industrial Biotechnology contain some information on SSF, there are hardly couple of books available separately on this subject. The present book which is the outcome of the National Level Specialist Group Meeting & Symposium on Solid-State Fermentation held at Trivandrum during March 23-24,1994 contains detailed information on every aspect of SSF. The various chapters provide state-of-art information on general scenario of SSF, fermenter design in SSF, production of food, feed, fuel, enzymes etc. by SSF, and various others like safety aspects on SSF.
